    Fresas con Crema is a popular Mexican dessert with roots that trace back to colonial times, when the Spanish settlers first introduced dairy farming, cream and sugar to the Americas.

    These delicacies were quickly paired with the native fruits of the area to create this luxurious treat. Over time Fresas Con Crema has become a staple, particularly at street fairs and family gatherings.

    Key Ingredients to Make Fresas con Crema

    1. Mexican crema or plain greek yogurt: The most authentic version would be Mexican crema, but plain greek yogurt works as well. You could also use sour cream as a substitute. Crema is usually richer and thinner, so while it is the most authentic, I do like the texture that greek yogurt adds.
    2. Evaporated milk: The evaporated milk thins out the dessert. There are some recipes online that call for similar amounts of greek yogurt and sweetened condensed milk, but an entire can of evaporated milk. I do not recommend this as it makes the crema thinner than I prefer.
    3. Strawberries: My preference is for fresh strawberries but you could definitely use frozen strawberries as well as long as they are thawed. Keep in mind that using frozen strawberries will give you a different texture but if you don’t mind that, the flavor is still fantastic! I recommend thawing your strawberries and draining the excess liquid to prevent your crema from becoming too runny.

    Recipe Variations

    Of course Fresas Con Crema is traditionally made with strawberries but you can use any fruit you like! Try it with peaches, mangos, raspberries, blueberries or blackberries!

    How to Make this Recipe

    A bowl filled with crema ingredients being mixed into a smooth, creamy blend.

    Step One: Mix all of the ingredients for the crema in a large bowl and whisk until combined. Refrigerate for an hour to allow the crema to thicken.

    Step Three: Add the strawberries into a glass and spoon the crema over the top. Enjoy!

    Expert Tip

    Patience is key in this recipe! The crema turns out pretty thin, but the longer you refrigerate it, the thicker it will get (thanks to the sweetened condensed milk!). Let the crema sit in the fridge for 1-2 hours for the best texture. Always serve your Fresas con Crema chilled!

    How Long Does Fresas Con Crema Last in the Fridge?

    You can store the crema mixture in the fridge for up to three days. I recommend keeping the strawberries and cream separate for long-term storage, combining them just before serving.

    Can I Make this Recipe Ahead of Time?

    You can make your cream mixture ahead of time and slice your strawberries the night before, but I don’t recommend combining the two until you are ready to serve. Otherwise your fruit will become soggy. Some people recommend adding the cream to the strawberries a maximum of one hour ahead of serving so that the sugars in the strawberries will leak more into the crema.

    How to Serve?

    Fresas con Crema can be served as is, with no additional toppings needed! However, some more creative home-chefs will serve it topped with granola, grated coconut, nuts or even other fruits!

    Ingredients

    • 2 cups Mexican crema or plain greek yogurt
    • 1 can sweetened condensed milk
    • ½ can evaporated milk
    • 2 tsp vanilla
    • ½ tsp salt
    • 2 lb strawberries

    Instructions

    • Mix all of the ingredients except for the strawberries in a large bowl and whisk until combined. Refrigerate for an hour, until the crema is thickened a little.
    • Wash and slice all of the strawberries.
    • Add the strawberries into the bottom of a glass. Then spoon the crema over the top.
    • Eat with a spoon and enjoy!

      I’m intrigued about this not being a popular recipe from Ghana. When researching Ghanaian desserts, I saw the comments from Ghanaians on your original video. I have seen several sites and articles that claim it is popular in Ghana. I have found videos of strawberry farms in Ghana and other videos showing strawberries costing $8 a package because they are imported. This is so confusing. It doesn’t make a ton of sense regionally that it would be popular but it could easily be a lingering influence from the colonial period. I guess the big question is, if this isn’t Ghanaian, WHY would this false claim of strawberry fool be spread across the internet? Perhaps it is enjoyed in a specific region, city, or restaurant?

        Hi Kate, I have a feeling one website article posted it a long time ago and it has become a game of telephone since then. When I was researching, I could only find other bloggers posting about it that WEREN’T from the country, which is why I was not trusting of the information. It was helpful that I reached out to other Ghanaians and then found out it was not a legitimate recipe from the country!
