What Do I Need to Make this Recipe?
Ingredients
- Pizza Dough: I like using frozen pizza dough that has not yet been rolled out into a shape. This way, I can shape and mold the shape of the dish to my liking. Make sure that you thaw the dough the night/morning before making this recipe! I use the same dough in both my Margherita Pizza and my Honey Barbecue Chicken Pizza recipes (Tiseo’s frozen pizza dough).
- Goat Cheese: I use plain flavored goat cheese. If you want to experiment, you can use other flavors instead
- Peaches: Use peaches that are just getting to their juicy stage but aren’t overly ripe. Do not peel the peaches.

How to Make this Recipe
Step 1: Prepare the Dough
Preheat the oven to 425 degrees Fahrenheit.
Line a cookie sheet with parchment paper. Press the thawed pizza dough into a rectangle shape on the parchment paper, about ⅛” thick.
Brush the crust with the olive oil.
Use your hands to crumble the goat cheese on top of the bread.
Put the cookie sheet in the oven and bake for 15 minutes, or until the dough is baked all the way through.
Step 2: Grill the Peaches
While the dough is baking, cut the peaches into slices. Place each peach slice on an ungreased electric griddle (you can also use a barbecue grill) and grill until char marks form on the flesh of the peaches.
Step 3: Assemble the Pizza
When the pizza dough comes out of the oven, top it with the grilled peaches and the fresh thyme. Then drizzle honey over the entire peach pizza.
Slice and enjoy!
Expert Tips
- Use flavored goat cheese if you want to experiment with the flavors of this Peach Pizza
- You can also grill the peaches on an outdoor barbecue grill if you have one available to you
- Other stone fruits will work in this recipe if you want to try them out, specifically nectarines
- If you want a more traditional summer herb, basil would be a great substitution for thyme in this peach pizza recipe
- If you don’t want too large of a peach pizza, you can always divide the dough in half and make two identical pizzas that are each a bit smaller
- If you want to stay away from too sweet of an appetizer, you can instead top the peach pizza with balsamic glaze (as opposed to honey)

Are a Flatbread Pizza and Normal Pizza the Same?
Flatbread pizzas are normally made with a different kind of dough than normal pizza, usually an unleavened kind.
Sometimes, though, flatbread pizzas are made using pizza dough, as can be found in this recipe. If you’d like a flatter pizza, do not use pizza dough as the dough will rise as it bakes. You can, instead, buy flatbread dough at the grocery store which will work as well.
If you buy flatbread dough, follow the baking instructions on the package when baking the dough.
How to Store Leftover Peach Pizza
Leftovers of this pizza will be good for 1-2 days after baking. The peaches tend to release juices after a few days which can lead to some soggy pizza leftovers.
I’ll imagine you’ll want to eat the entire pizza in one sitting, but if you can’t make sure to save some room to polish it off the next day.
How to Reheat Leftovers
You can microwave the leftover pizza or heat it up in the oven. To reheat it using the oven, preheat the oven to 350 degrees.
Place the pizza on some aluminum foil and bake for about 5-8 minutes or until the pizza is warmed through. Enjoy!
