    Are you ready for the Fourth of July? This sugar cookie fruit “pizza” is in the shape of an American Flag, perfect for celebrating any patriotic holiday! It is made with store bought cookie dough for a simple recipe that will impress everyone at your celebration

    1. Simple: I love this recipe because it is SO simple. No need to make homemade cookie dough when you can fancy up the store bought kind! You will only need 9 ingredients to throw together this easy and impressive dessert. 
    2. Great for Kids: Kids LOVE this recipe because it is a visual representation of the holiday that they are celebrating! This would also be a fun recipe for kids to help assemble, especially the fruit and whipped cream.
    3. Celebrate 4th of July (or any other holiday): The decorations on the cookie can easily be adjusted to celebrate any country or holiday! Switch up the fruit you use to allow for different colors and get creative with design. This cookie is tasty no matter what you’re celebrating! 

    What Do I Need to Make this Recipe? 

    Ingredients

    1. Fruit: Strawberries, blueberries
    2. Sugar Cookie Dough: I used store bought for this recipe, but you can also make your own batch if preferred. 
    3. Cream Cheese: Full fat, plain cream cheese
    4. Butter: Unsalted, softened
    5. Whipped Cream: You can make your own or use a spray can. I recommend the can for the best visual appearance. 
    6. Additional Items: Powdered sugar, vanilla, honey

    How to Make this Recipe

    Step 1: Make the Cookie

    Preheat the oven to 350 degrees Fahrenheit. 

    Roll the dough out into a 13×9 inch rectangle on a piece of parchment paper. You can use flour to make sure that the dough doesn’t stick to the rolling pin. Once rolled out, use the parchment paper to transfer the cookie onto a baking sheet 

    Bake for 11 minutes or until the edges are starting to brown and the middle is cooked. 

    Step 2: Make the Frosting

    While the cookie is cooking, make the frosting. In a medium-sized bowl, use an electric hand mixer to combine the butter and the cream cheese until fluffy.

    Add the vanilla and honey and mix again.

    Add about ½ of the powdered sugar and use the hand mixer to combine it. Then, add the other half and mix until fully combined. Set aside. 

    Step 3: Decorate the Cookie

    Remove the cookie from the oven and allow it to cool. Once cooled, use a knife to cut off any edges that expanded during baking so that you have a perfect rectangle again.

    Use a rubber spatula to spread the icing over the cookie. 

    Then, use your blueberries to outline a blue square in the upper lefthand corner of the cookie. Fill it in with blueberries!

    Use the strawberry slices to make red stripes on the cookie. In between the red stripes, add dots of whipped cream to make the white stripes. 

    Cut into pieces and serve. Enjoy! 

    Expert Tips

    • If you don’t like whipped cream or want a larger fruit variety you can replace the whipped cream dollops with cut up bananas 
    • If you don’t like strawberries, you can substitute raspberries in for the strawberries
    • Do not put the whipped cream on the cookie until you are ready to serve. It melts after 20-30 minutes, so you will want to put it on at the last minute. 
    • You can add flour to the cookie dough to keep it from sticking to the rolling pin when rolling it into the 9×13 shape. 
    • Alternatively, you can put the dough in between two pieces of parchment paper in order to roll it out into the right shape. You may want to also sprinkle some flour on the parchment paper beforehand to keep the dough from sticking.

    How Long Will this Fruit Pizza Stay Good For?

    Because the fruit is already cut up on top of the cookie, the shelf life for this recipe is short. You can store the cookie covered in the fridge, and it will stay good for 1-2 more days.

    If you want to elongate it’s self life, remove the fruit before storing and add new fruit when you want to enjoy it again. In this case, the cookie will last for 3-4 days.  

    Keep in mind that the cookie will continue to soften the longer it is in the fridge. 

    Can I Make this Cookie Circular? 

    Yes, if you have a pan that can fit a large, circular cookie, you can definitely make this cookie circular. 

    However, I recommend rectangular as you can better see the flag decoration this way. 

    My Cookie is Crunchy. How Can I Fix It?

    The first time I made this recipe, I overcooked the cookie dough a bit. When I removed the cookie from the oven, it was crunchy and crumbly. 

    However, after a few hours of sitting with the frosting on it, the cookie softened up!

    If you overcooked your dessert, simply add the frosting and wait a few hours. The texture of the cookie softens over time, so you will be left with a soft cookie ready for you to enjoy.
