    1. Redskin Potatoes: Redskin potatoes have just the right amount of starch to create fluffy, delicious mashed potatoes. The tender skin cooks up so nicely you don’t have to peel the potatoes. 
    2. Salted Butter: Some people prefer to use unsalted butter to have more control over exactly how much salt is going into their potatoes. It’s fine to make that substitution. 
    3. Garlic: This recipe also calls for a large amount of garlic. Trust me. It melts perfectly into the potatoes and won’t overwhelm you. 
    4. Green Onions: The green onions add balance and extra flavor to this dish. You can use the green and the white part of the onion.
    5. Cream Cheese: Cream cheese adds a hint of creaminess to the potatoes and helps create the perfect texture too.
    6. Milk: Milk is important to helping you reach the best consistency. Whole milk is preferable.

    1. Large Pot: You need a pot big enough to boil and mash your potatoes in.
    2. Potato Masher: I do not recommend using an electric hand mixer as this will make the potatoes gluey. 

    How to Make This Recipe

    Step 1: Boil and Mash the Potatoes

    Place potatoes in a large pot and fill the pot with cold water- enough water to cover the potatoes. Bring the water to a boil and boil until the potatoes are fork tender (about 15 minutes). 

    Drain the excess water, then place cut potatoes back into the pot. Use a potato masher to mash the potatoes to your desired consistency. 

    Step 2: Prepare Your Seasonings

    Once the potatoes are cooked, add the butter to a pan over medium heat and allow it to melt. Then add the minced garlic and saute until the garlic is fragrant.

    Once the garlic is fragrant, add the green onions and saute for another minute.  

    Step 3: Mix it all up!

    Add the melted butter and garlic to the mashed potatoes along with the salt, onion powder, milk and cream cheese.

    Stir to combine and add more milk according to texture preference. Enjoy!

    • Some people feel like red skin potatoes create a gluey texture when mashed. You can add a few Russet potatoes or Idaho potatoes into the mix to help combat this. Just make sure to peel them first!
    • Don’t forget to wash your potatoes well before boiling them. Boiling the potatoes will clean them, but when you dump out the water the dirt at the bottom of the pot may go right back onto your potatoes. 
    • If you want to keep your potatoes piping hot, heat up the butter and milk before adding it into your mixture.

    You can customize this dish as much as you want. Try adding a few tablespoons of sour cream, heavy cream or even cheddar cheese to add to the flavor.

    I like using freshly minced garlic as I feel like it adds texture and so much flavor but roasted garlic would also be delicious!

    FAQs

    My Mash is Too Thin/Too Thick?

    Getting the right consistency with potatoes can be a challenge. If your potatoes are too thick, try adding milk, just a quarter-cup at a time and mixing well until it reaches the consistency you would like. 

    If your potatoes are too thin, you can try cooking them on your stovetop just a little longer to cook off some excess liquid. If you attempt this, do it at a very low temperature. You could also boil and add more potatoes to your mixture.

    Can I Make These Potatoes Ahead of Time?

    Freshly-made potatoes are preferable, but it is possible to make your Garlic Redskin Mashed Potatoes ahead of time and reheat to serve. They may thicken up as they get cold so you will need to add some liquid when you reheat. 

    Add a few tablespoons of butter to the top before heating, and then mix the melted butter in once the potatoes are warm. You could also mix in some warm milk to reach the right consistency.

    If you are preparing a large meal and want to save your potatoes for just a few hours before serving, put them in a slow cooker on a warm setting. The crock pot will keep them nice and warm and they will be ready to go when it’s time to eat.

    Can I use Baby Potatoes for This Recipe?

    Small red potatoes would taste great but because of the size you will end up with more skin in your mash. Regular sized potatoes are preferable.

    Should I add Salt to the Water While The Potatoes Are Boiling?

    You can add salt to the water while the potatoes boil or you can wait and add all your seasoning at the end. You can also boil your potatoes in chicken broth or chicken stock for extra flavor. Just be careful not to add too much salt to your recipe. It’s tough to fix over-salted food!

    Ingredients

    • 2 ½ lb redskin potatoes, washed and cut into quarters
    • 8 tbsp salted butter, cubed
    • 1 head garlic, 8-10 large garlic cloves, peeled and minced
    • 2 stalks green onions, chopped (both white and green parts)
    • ½ tsp sea salt, optional
    • ½ tsp Onion Powder
    • ¼ cup milk
    • 2 oz cream cheese

    Instructions

    • Place 2.5 lb potatoes in a large pot and fill the pot with water. Bring the water to a boil and boil until the potatoes are fork tender (about 15 minutes).
    • Drain the potatoes, then add them back into the pot. Use a potato masher to mash the potatoes to your desired consistency.
    • Once the potatoes are cooked, add 8 tbsp butter to a pan over medium heat and allow it to melt. Then add the full head of minced garlic and saute until the garlic is fragrant.
    • Once the garlic is fragrant, add 2 stalks chopped green onions and saute for another minute.
    • Add the melted butter and garlic to the mashed potatoes along with the ½ tsp salt, ½ tsp onion powder, ¼ cup milk and 2 oz cream cheese.
    • Stir to combine and add more milk according to texture preference. Enjoy!
