Dulce de Leche, an Argentinian specialty, is a milk-based caramel. It can be eaten alone with a spoon, drizzled over ice cream, spread on toast in the morning, or even sandwiched between cookies!
Stir together milk, sugar, and baking soda in a larger pot than you think is necessary.
Once the liquid comes to a boil, reduce the heat and simmer on the stove for about 1.75 hours. Make sure to stir so that it does not burn, especially as you near the end.
After the dulce de leche is smooth, thick, and creamy, remove from heat.
