  • 1 cup uncooked quinoa
  • ¼ cup parsley, chopped
  • ½ red onion, finely diced
  • 1 cup feta cheese
  • 1 8.5 oz jar California Sun Dry Brand julienne-cut sun dried tomatoes, drained, rinsed, and dried
  • 1 15 oz can chickpeas, drained and rinsed
  • 1 ½ Avocado, pitted and cubed


  • cup olive oil
  • ¼ cup lemon juice
  • 3 tbsp red wine vinegar
  • ½ tsp black pepper
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½-1 tsp sea salt, depending on taste


  • Cook the quinoa according to the directions on the package. Allow to cool.
  • Combine the dressing ingredients in a separate bowl or jar.
  • Mix quinoa with the rest of the salad ingredients. Pour dressing over the top.
  • Serve cold or room temperature! Enjoy!
