Sweet Potato Casserole Recipe

for Thanksgiving

Prep the Sweet Potatoes

Use a fork to pierce the skin of your sweet potatoes. Put the trivet in the bottom of the Instant Pot, and pour 2 cups of water into the pot.

Cook the Sweet Potatoes

Set the timer to HIGH for 31 minutes. When the timer is done, allow for a 10 minute Natural Pressure Release. 

Prep the Filling

Peel your sweet potatoes. Use a potato masher or an electric hand mixer to mash them until smooth. Add the sugar, egg, butter, and vanilla, then mix again.

Make the Topping

In a small bowl, mix the topping ingredients until a crumble is formed.

Layer the Casserole

Scoop the sweet potato mixture into a glass bowl or casserole dish that will fit inside your Instant Pot. Spread the topping across the top of the sweet potato mixture.

Cook

Pour 2 cups of water into the Instant Pot. Place the trivet in the pot and casserole on the trivet. Cook on HIGH for 15 minutes & perform a Quick Release.
