COLCANNON

Colcannon is an Irish tradition made of creamy mashed potatoes and colorful greens. This delicious dish is perfect for St. Patrick’s day or a new Easter tradition!

– Russet potatoes – Garlic – Greek Kale – Uncooked bacon – Unsalted butter – Heavy whipping cream – Scallion – Olive oil – Sea salt

Cook your potatoes until fork tender, like you would for any mashed potatoes. 

Prepare the kale and bacon:  Cook the bacon until crispy. This will be delicious in the recipe and give flavor to the kale that'll be cooked in it next.  

Add the heavy whipping cream and butter to the potatoes and mash until creamy. 

Combine the rest of the ingredients and fold them in. 

Enjoy changing up your traditional mashed potatoes for this delicious Irish version.
