Vegetable & Lobster Eggs Scramble

Ingredients 

Olive oil Roma tomato Baby spinach Lobster tail Bacon Eggs Milk Cream cheese Onion powder Garlic powder Salt Fresh cracked black pepper

Cook the Veggies: Add olive oil then add the diced tomato and the baby spinach. Saute until the spinach wilts.

Cook the Lobster Tail: Place the opened tail on a cookie sheet and drizzle with the remaining 1 tsp olive oil. High broil for about 4-6 minutes.

Cook the Bacon: Cook the bacon until it is crispy. Remove the bacon to a paper-towel lined plate and reserve the bacon grease.

Cook the Eggs: Whisk the eggs and milk and add to the pan. When the eggs are cooked about halfway, add the cream cheese, onion powder, garlic powder, salt, and pepper.

Once the eggs are cooked, add the tomatoes, spinach, bacon, and lobster. Stir to combine. Serve and enjoy!

TIPS

The key to fluffy scrambled eggs is to add quite a bit of milk to your eggs. Then, cook them on a very low heat. If the temperature of your pan is too high, the eggs will curdle instead of becoming fluffy.

Sauteing the vegetables is important to release excess liquid in them. If you add them right into the pan, the eggs will get runny.

TIPS

Feel free to add other spices if you’d like. Something spicy might also be a delicious option.
