Irish stew is the perfect dish for a cool fall day or any day of the year. Warm up with a hearty bowl of filling Irish stew!
– Beef stew meat – garlic – yellow onions – carrots – leeks – parsnip – fresh thyme – bay leaves – ground black pepper – russet potatoes – beef stock
FULL INGREDIENT LIST
Bring some flavor to the beef before it's immersed in the stew by searing the beef chunks in your dutch oven.
Place your beef on a plate and add the chopped veggies to the dutch oven, saute them until soft.
Return the beef to the pot, add in the stock and seasonings.
Bring the stew to a boil, then simmer it for about an hour to 1.5 hours.
Some chefs like to replace some of the stock with red wine or Guinness beer (this is called Guinness Stew). Feel free to give it a try if you like!
Cabbage is a great addition to this stew. I recommend adding about 1 cup of young cabbage leaves into the stew about 10 minutes before serving.
Enjoy this healthy, hearty bowl of goodness!
