This Vegetable Medley is also known as Batar Da’an in East Timor. It is a veggie-packed side dish filled with corn, onions, butternut squash, and beans/peas. You can eat it as a side or even as breakfast!

– Butternut squash – Onion – Garlic – Sweet corn – Mung beans – Onion powder – Garlic powder – Ground coriander – Salt & pepper

Cook the butternut squash by roasting in pieces in the oven.

Saute garlic and onion in a frying pan.

Add in the remaining veggies with the roasted squash. Sprinkle in the seasonings.
