Kabuli Pulao

Kabuli Pulao is an Afghan rice dish made by cooking lamb with a delightful blend of spices. The lamb is then piled high on the rice and served with carrots, raisins, and toasted almonds.

This is a recipe you'll find shared for a celebration or at a wedding! It's time consuming but sooo worth it. 

You can buy garam masala, a spice needed for this dish or make your own!

Let's saute the onion! Set aside when fragrant and soft.

Cook the lamb in the same pan. Once it's browned on high heat, simmer it with the onions and water for an hour.

Let's toast up those almonds with some ghee.

With medium heat, use the leftover ghee and fry the carrots until lightly colored.

Get those raisins added in so they become plump and give it a little sugar.

Make 3 or 4 holes in the rice with the end of a wooden spoon. Place lamb mixture over half of rice and carrots/raisin mixture over the other half of rice. Pour reserved meat juices over the top. Bake!
