Persian  Ghormeh Sabzi

Ghormeh Sabzi is an aromatic meat stew stuffed with flavorful green herbs. It is so popular in Iran it even has its own unofficial holiday.

–Parsley –Chives –Cilantro –Olive oil –Fenugreek –Yellow onion –Beef stew meat –Black pepper, salt –Turmeric –Dried limes –Red kidney beans

Use a food processor to prepare the herbs.

Saute the herbs with a bit of oil.

Fry the onions and stew meat together. Add in the seasonings at the end, when it's almost done cooking.

Time to add the herb and water back into the meat mixture. The dried limes go in and then it simmers for up to 3 hours.

Add the kidney beans when it's done cooking. Serve your stew with a bed of saffron rice.
