This Pigeon Peas and Rice recipe is a twist on a popular Bahamian staple and is a delicious one-pot wonder. Bacon fries in a pan and then cooks alongside rice and peas to make a savory, comforting side dish or main meal!

– Bacon – Red Pepper – Onion – White rice – Salt – Tomato paste – Oregano – Cumin – Pigeon peas – Corn – Diced roasted tomatoes – Chicken stock – Cilantro – Scallions

Fry the bacon until it's nice and crispy in a pot. Set aside. 

Add the olive oil to the pan with salt, rice, bell peppers and onions. 

Add the veggies, seasonings and tomatoes to the pot with the broth and water. 

Cover the pot and let it simmer until the liquid is absorbed. Fluff the rice with a fork before stirring in the bacon. 

Garnish each bowl with sliced scallions and cilantro before serving.
