Prepare the Cheese: Combine the hand grated cheeses in a large bowl, and add cornstarch to the cheese. Mix to combine.

Prep the Fondue: Heat a fondue pot. Add the olive oil until warmed. Then add garlic and shallots and cook five minutes.

Melt the cheese: Once the shallots are cooked, add the white wine and bring to a boil. Turn the heat to low. Divide the cheese into quarters and add one quarter at a time.

Add the salt and ground mustard into the cheese, and mix one last time. Use bread to dip into the cheese. Enjoy!
