Cut up cider donuts into bite sized piece and add them to a baking dish.

Prepare the filling. Whisk the eggs, half and half, sugar, cinnamon, vanilla, baking soda and salt

Combine the donut pieces with the creamy mixture and let it soak up. Then bake it so it's stale and delicious before adding the filling.

Prepare the vanilla sauce.

Get started on the apple compote.

Simmer the apple mixture in a saucepan for about 15 min.

Assemble the apple cider bread pudding with the apple compote over the baked cider donut pieces and drizzle the vanilla sauce over the top.
