What is the Difference Between Jambalaya and Gumbo?
Gumbo is a stew-like dish made with protein, is thickened by a roux as well as (typically) either okra or filé. Rice is served after the gumbo has finished cooking.
Jambalaya features rice as its main ingredient. It also contains protein but does not have a thickening agent Instead the rice cooks with the protein, spices, and vegetables (and sometimes tomatoes) for a delicious final product.
