    Blueberry Bread with Blueberry Glaze

    Blueberry Bread is a delicious and simple recipe that you can make for breakfast or dessert! The loaf is coated in a purple blueberry glaze that adds the right amount of sweetness and oomf to an already delicious dessert.

    If you’ve been around my social medias for any length of time, you’ll know that I am OBSESSED with my recipe for Strawberry Bread and with this recipe for Pineapple Bread!

    This is a recipe I developed earlier in the spring and is made with delicious and fresh strawberries. It resembles banana bread, except that the strawberry chunks are mixed into the bread instead of being part of the batter. 

    Well, the strawberry bread was such a hit that I decided to make another rendition. This time, we’re enjoying blueberry bread! The ingredients for these two recipes are very similar, except for the fruit used in them! 

    The best part about this blueberry bread, though, may not be the bread itself. It’s arguable that the glaze on top of the bread is really what sends this loaf over the edge.

    This recipe is absolutely delicious and I cannot wait until you try it for yourself!

    What Ingredients Do I Need to Make the Bread?

    All purpose flour
    Baking soda
    Salt
    Granulated sugar
    Egg
    Buttermilk
    Vegetable oil
    Vanilla
    Milk
    Blueberries

    What Ingredients Do I Need to Make the Glaze?

    Powdered sugar
    Butter
    Blueberries

    How to Make the Recipe

    Preheat your oven to 350 degrees Fahrenheit.

    In a large bowl, mix 2 cups flour, baking soda, and salt together. Set aside.

    In a medium bowl, whisk your egg and sugar together. Then, whisk in the buttermilk, vegetable oil, and vanilla.

    Pour the wet mixture into the dry mixture and stir to combine. Do not overmix.

    Once the mixture is completely smooth, add in the milk. Whisk again to combine.

    Toss your blueberries with 2 tbsp of flour. Pour the blueberries into the batter and fold them in carefully.

    Grease a 9 x 5 glass baking pan. Pour the batter into the pan. Cook for 50-55 minutes. Check the bread. If at any time, it begins to brown too much, cover it with aluminum foil. To check to see if your bread is done, insert a toothpick into the middle. If the toothpick comes out clean, your bread is ready.

    Remove the bread from the oven and allow it to cool.

    In the meantime, make the glaze. Place the blueberries in a blender and blend until pureed. Combine the powdered sugar with melted butter and blueberries. Whisk until smooth. 

    When the bread is cool, pour the glaze over the blueberry bread.

    Can You Use Frozen Blueberries in Blueberry Bread? 

    Absolutely! If you’d like to make this recipe but don’t have fresh blueberries, you can always use frozen blueberries! 

    In order to prepare your blueberries correctly, put them in a strainer and run them under lukewarm water. Keep the water running over the blueberries until it runs completely clear, meaning that the berries have been washed completely. At this point, your berries should be thawed as well. 

    Now use a paper towel to dry the blueberries. Any extra liquid sitting on the blueberries will make them sink to the bottom of the loaf, so you want to make sure that you dry the blueberries very well.

    How Do I Stop Blueberries from Sinking? 

    Once the blueberries are dried, you need to toss them in 2 tbsp of all purpose flour. Tossing the blueberries in flour soaks up any extra liquid they may be carrying. It also allows the blueberries to grab their place in the dough, meaning that they won’t sink to the bottom!

    If you add blueberries to this recipe without tossing them in flour, you will almost certainly end up with a loaf that has a layer of blueberries only across the bottom.

    • 1 tsp baking soda
    • ½ tsp salt
    • ¾ cup granulated sugar
    • 1 egg

    • 1.5 cups powdered sugar
    • 1 tbsp butter, melted
    • ½ cup blueberries
